With their elongated and robust shape, King oyster mushrooms are sometimes referred to as "king trumpet" or "royal trumpet" mushrooms. They are known for their mild, nutty flavour and firm, meaty texture. They can be grilled, roasted, sautéed, or used as a meat substitute in various dishes. Their thick stem and small cap lend themselves well to slicing into medallions or strips, making them a popular choice for stir-fries and kebabs.

King oyster mushrooms are low in calories and fat while providing dietary fibre. They also contain essential minerals such as potassium, phosphorus, and selenium. These mushrooms are a good source of B vitamins, including vitamin B3 (niacin) and vitamin B5 (pantothenic acid), which play important roles in energy metabolism.
