Coral fungus, also known as Coral Tooth Mushroom or Comb Tooth Mushroom, is a fascinating and distinctive species within the Hericium genus. This mushroom is notable for its unique appearance, resembling a cascading mass of elongated teeth or spines.

Hericium coralloides has an off-white to pale yellow colour, and its spines hang down from a central base, resembling a coral structure. This intriguing appearance has earned it the common name "Coral Tooth Mushroom."

In terms of flavor, Hericium coralloides offers a mild and delicate taste with hints of sweetness. Its texture is tender and has a slight crunch, reminiscent of seafood, which makes it a popular choice for vegetarians and vegans as a substitute for scallops or lobster in various dishes.

While less well-known than its close relative Hericium erinaceus (Lion's Mane Mushroom), Hericium coralloides shares similar health benefits. It is believed to possess potential immune-boosting and neuroprotective properties. Like other mushrooms, it is a source of dietary fiber and contains various vitamins and minerals.

Hericium coralloides can be enjoyed in a variety of ways. It can be sautéed, stir-fried, grilled, or used as an ingredient in soups and stews.
